We have our top layer in our freezer....I will take it out a couple of days before our Anniv. If it looks awful, I am going to get a small recreation of our wedding cake made to eat!

| Well, I don't think I am going to save the top layer. I will save money by using it, and not having to order another sheet cake. I am not a huge cake lover, my idea of a good cake is ice-cream, or a home-made cheesecake Thanks for all your opinions!
August 2, 2008 was the happiest day of my life! I am a married woman now!!

Our top layer is in the freezer awaiting next year!! The same person made my cake that made a friend of mines, and he said that a year later on their anniversary, the cake was still fantastic!! I think that if you have it wrapped well enough, it shouldn't get freezer burnt and will be fine!! Ours in wrapped in plastic wrap, then in a styrofoam box, which is also wrapped all around in plastic wrap. Should still be good (I hope so - its chocolate cake with Bailey's icing - YUM!)

| We kept our top layer, but it didn't survive the year. I had to toss it as it was very freezer burned. That's ok though, we just went to Demetres and got two slices of cheesecake instead for dessert

| I saved the top to ours.. wrapped in a few layers of plastic wrap.. and a couple layers of tin foil... brought out on our first anniversary.. and it was yummmmmy!

Wow!! I hadn't even thought of that!! Nice idea! 
Plus, the Kiwis will definitely enjoy a good fruitcake rather than some fluffy cream thingy-me-jig!
