| heres my favorite chicken recipe, super fattening and super yummy You will need: -Chicken breasts -2 cans of cream of mushroom (i use campbell's) -cooking cream -crushed garlic -chopped mushrooms -butter -broccoli -oregano -marjoram -mozerella cheese 1. Cut up chicken breasts in small squares and stir fry them in a bit of butter. when they are cooked, remove them and set them aside. 2. Seperately, steam some brocoli and set those aside. 3. In the bottom of a pot fry some garlic and mushrooms in a teeny tiny bit of cooking oil. 4. Add to this pot 2 cans of mushroom cream, with one and a half cans (I use the same campbell can to measure) of cooking cream. Add some oregano and some marjoram to this and mix it all together. Let it boil. 5. Once it boils, add the chicken squares to the pot and let them all boil together on medium heat for about minutes. 6. Empty out the pot's contents into a Pyrex (or something similar that can go into the oven). put the brocoli on top of the chicken and cream, and add some cheese over the brocoli and put it in the oven just so that the cheese can melt. And thats it! Sounds like theres lots of steps but its actually pretty easy. I hope my instructions made sense i wrote them myself lol I usually make a side dish of either rice or potatoes with this. its soo yummy that now i feel like cooking it

Here's an easy recipe I go to whenever I'm running out of time or just too tired to do something else.
Easy Carbonara
4 slices of bacon, thinly sliced (turkey bacon works well too, but you'll need to use some olive oil when cooking this)
1/2 medium red onion, thinly sliced
1/2 lb spaghetti
grated Parmesan cheese
2 eggs, beaten
salt and pepper to taste
1.) Cook spaghetti according to package instructions (taste a lot better al dente)
2.) Cook bacon until crisp.
3.) Add the onions, salt and pepper. Cook until the onions have caramelized.
4.) Drain spaghetti. Put in a bowl. add the eggs and cheese. The heat of the pasta will cook the egg and melt the cheese (yummy!)
5.) Toss in the bacon and onions.
Serves 2

| My mom gets all the What's Cooking magazines from Kraft. I was looking for something easy to make and tried the Grilled Bruschetta Chicken.. I make it all the time now, and it is absolutely delicious. All you need is chicken, tomato, shredded cheese, basil and kraft sundried tomato dressing! This is one of my favourite recipes for easy chicken. It's called Kickin' Chicken and it is from the Eat, Shrink, and Be Merry cookbook. 12 boneless, skinless chicken thighs or 6 boneless, skinless breasts (about 2 1/4 lbs) but I usually just do two chicken breasts since it is just DH and I. 3/4 cup bottled light peanut sauce 1/2 cup medium or hot salsa 1/4 cup chopped, fresh basil leaves
Preheat oven to 400 F. Spray a 9x12 inch baking pan with cooking spray. Arrange chicken thighs in the pan in a single layer. If you're using breasts, cut them in half to make them fit the pan if necessary. Combine peanut sauce, salsa and basil in a bowl. Pour over the chicken evenly and make sure all pieces are well coated with sauce. Bake, uncovered for 40-45 mins for thighs, and 35-40 mins for breasts, or until chicken is no longer pink in the centre and sauce is bubbly. To serve, arrange chicken on a platter and pour the sauce from the pan over top.
6 servings Mmm. This sounds great. DH & I make a Salsa & Peanut butter pasta when we're really uninspired or when the cupboards are bare. Everyone thinks it sounds gross, but it is so-o good: Cook pasta, drain. While pasta's still hot, add some peanut butter & stir in to melt. Add some salsa & stir. Continue to add pb & salasa to taste. Add chopped up veggies - raw or sauteed.

| Tonight DH and I are trying Rachel Ray's Wingless BBQ Chicken Pizza. You'll need pizza dough, 2 chicken breasts, hot sauce, butter, monteray jack cheese, blue cheese (although I'm sure you can use whatever suits your tastes, worshestershire sauce, tomato sauce and green onions. Take the chicken sprinkle with your favorite seasoning (Montreal Steak spice for chicken in our case) cook until done. Heat 2tbs of butter and 2-3tbs of hot sauce in a small pot, add 1-2tbs of worshestershire sauce and 1/4-1/2 cup of tomato sauce cook on medium heat for 10mins. Meanwhile roll out your dough (she put it in the oven drizzled with EVOO because she likes it crisp) Cut the chicken into strips, add to your hot sauce. Pour everything over your pizza dough, sprinkle with blue cheese (yuck IMO) monteray jack, and top with green onion. Cook until cheese has melted. Hopefully it will be good since DH has been looking forward to it all week. Quesidillas are another good quick meal. Last night we had steak quesidillas. I used the thin fast fry steak cut it into strips, cooked it in a little bit of butter, Montreal steak spice, and some burrito seasoning (Old el paso I think 1-2tbs) and some red pepper. Once the steak was cooked, I poured it over a cheese flatbread, sprinkled with mozarella, threw the second flatbread on top, and cooked each of them in a big frying pan until the flatbreads were a little brown and the cheese was melted. I served them with salsa and sour cream on the side for dipping purposes. ETA: The pizza was really good!!! DH added red peppers and peperoni to his. We had 2for1 pizza last night, and it tasted so bland... guess we'll be making our own pizza from now on!
