I will be flying Air Canada out of Calgary, AB are they likely to let my wedding dress on the plane and have somewhere to hang it? Any of the phone numbers I called (tried 3) went to general service people and all they could tell me was I would have to ask at the check-in desk if they would allow it.
Should I be counting on having to bunch it up as carry on, and it needing drycleaning to straighten it out when I get there?

this question has been posted many many times and I've never heard anyone say they have a problem.
Everybody takes it carry-on, some people get lucky and put it in a closet, but many planes don't have closets so then you have to put it in the overhead bin (most people watch that bin like a hawk and don't let anyone else put any luggage in it).
I flew with my dress 7 times!!! (3 seperate trips, i.e. I bought it in another city, 2 connecting flights for DW, and then flew to my AHR back in my hometown, plus return flights for the later 2 trips) and never had a problem, it went in the overhead bin every time. Also, it didn't count as my carry-on any of those times, each time I still had two other carry-ons.
Airlines are rarely strict with carry-ons. I fly multiple times a year and I always surpass the limit (i.e. either by having 3 carry-ons, or by having 2 but the second is bigger than allowed) and have never had problems. It's only with checked luggage that they are strict.
