I work for the liquor control board of Ontario, as well as have some experience buying for large parties.
Someone said that it depended on the attendee's. You should try to get a picture of what people like.
General rule of thumb: 1. Vodka, Rye, Rum, Gin are the single most important spirits to be well stocked up on. 2. Wine: Selection depends on what you will be serving i.e: Prime Rib/Steak/Medallions - A nice shiraz as it is a full bodied grape that can hold its own with red meats. White: Fish, chicken. Reislings and Pinot Grigio's are generally lighter of the whites as opposed to a Sauvigion Blanc.
Generally.. Wine is a big hit for the meal. Most people find wine is not served as much during the rest of your reception unless the people who are attending are avid wine coniseures. For a 5 course meal with an 8 person table i would say have 6 bottles of each ( red and white ) available. per table. Its better to overstock than under. You'll get a better value buying larger bottels of wine and maybe having wine canisters on the tables for guests / waiters to pour.
Vodka.. i would think 5-6 1.75 L would do. Rum 5 of the same size Rye 3 1.5L Gin 2-3 1.5L
Anything else is to your taste. Beer.. for 200 people.. maybe 6-8 24's. Remember anything not used can be returned if sealed.
p.s, personally speaking.. i dont know if you have tried this.. but Hypnotic, Malibu Rum ( coconut ) ice and cranberry is an amazing drink. A girlfriend of mind made it her signature drink at her wedding.

also check that your venue will allow the bigger bottles... ours would only let us use 26oz or "true" 40oz the machines that they used would not accommodate 1.5 lites
