I am in love with my crockpot.. quite literally! I would cease to exist without it!
one of my favourites is just to jam a bunch of meats into it.. like a half of a pork roast, half a beef roast (or some cheap steaks)..and maybe a few chicken breasts.. cut up some onions and throw it on low for 8 hours! woo.. easy as pie and it makes a great meal with lotsa leftovers

I also have the Company's Coming Slow cooker recipe book and highly recommend it. That being said, pretty much any recipe that you can do in the oven, you can do in the slow cooker!
Here's an awesome website with recipes for slow cookers:
(Don't mind the fact that it's "meant" for ppl 50+)
http://www.50plusfriends.com/cookbook/crockpot/index-5b.html
Also, one thing I would recommend is that you find out how yours cooks before you leave it all day. Mine cooks faster, even on low, than everything in my recipe book calls for. I don't know if it's the elevation or what... but if a recipe says 8-10 hours, I really can't leave things more than 8, or they're over-cooked. When I'm going to be gone more than 8 hours, I will use frozen meat if possible.
Oh, also if yours doesn't say, use a good measuring cup and measure the capacity of your crock pot. Some recipes go better in smaller ones, some go better in bigger ones, and if yours is the opposite, you will need to scale up or down the recipe, otherwise it may not work out.
One of my *favorite* recipes (from the Company's Coming book) is as follows:
Tasty Mex Casserole
1.5 lbs lean ground beef
3 tbsp white vinegar
1 tbsp chili powder (or more if you prefer)
1 tsp dried whole oregano
1/4 tsp garlic powder
salt & pepper to taste
Mix together, scramble fry in non-stick pan until browned. Drain.
1.5 cups chopped onion (we have a texture issue with onion, I substitute onion powder)
1 medium green pepper, chopped
4 oz canned chopped green chilies, drained (optional)
12 oz canned kernal corn (I use frozen)
1 cup elbow macaroni (dry)
2 x 14 oz canned tomatoes with juice, broken up (can use whole or diced)
2 tsp chili powder
1 tsp parsley flakes
1/2 tsp dried whole oregano
2 tsp granulated sugar (I omit)
salt & pepper to taste
Put all ingredients in slow cooker. Stir well. Cook on low 8 hours or on high for 4 hours. Makes 10 cups (2.5L)
(Note, I put the corn in after I come home, chuck it on high & let it warm up. The pasta will be incredibly soggy, but this doesn't bother me. If you prefer your pasta al dente, don't put it in the slow cooker, but cook it and add it in at serving time. This also is much better with oodles of grated cheddar cheese on top!)
Enjoy!!!!
