I looove my slow cooker.  I leave the house at quarter to six every morning, drop my daughter off at daycare, go to work, then be home  by 4-ish. Then its homework time for my daughter, then we read, so I don't want to miss out on that with her, and that is where my slow cooker comes into play! I make EVERYTHING in that.  One of my FH's fav things is Meatballs in a sweet and sour sauce (just vinnegar, brown sugar (equal parts), water, and two tablespoons of flour) then about a half hour before dinner I throw together a salad, make some rice and were good!

Another quick all in one meal is to put water and chopped onion, celery, and red peppers in the slowcooker add un cooked rice and either chicken breasts pork chops or some sort of meat and leave it. Keep it on low and let it simmer all day, its pretty good to (you can add whatever spices you want to it). I have sooo many recipies, but I would love to hear someone elses!

I tried a new one on the weekend and it was a hit!:
6 frozen chicken breasts
1/2 cup apricot preserves
1/3 cup Russian dressing
1/2 pkg. onion soup mix

Mix everything, but the chicken, together in a bowl.  Put frozen chicken breasts on bottom of pot and cover with sauce mixture.  Cook on low for 5-6 hours, or until chicken is no longer pink.
So simple but so tasty!  I served it with brown rice, veggies, salad and bread.

I have quite a few slow cooker cookbooks at home, but I don't use it as often as I'd like to. There's a chicken recipe that we loved though - I'm at work so I don't have it right now, but I found basically the same thing online:

Italian Chicken
4 frozen chicken breast halves
1 envelope dry Italian salad dressing mix
1 can (14 ounces) chicken broth

Place chicken in greased 3 1/2 to 4 1/2 quart slow cooker.  Sprinkle with salad dressing mix.  Pour chicken broth over the top.  Cover and cook on high heat 4-5 hours or on low heat 8-10 hours.  Makes 4 servings.  Serve with buttered noodles of creamy risotto.

I think the recipe I had called for some water instead of the chicken broth, but it's been a while since I made it and this might be it exactly.

I had to come back to this topic to post a slow cooker recipe I just used on the weekend. I can't remember where I found it (maybe Canadian Living).  It was so-o delicious and impressive to serve to our dinner guests.

What I also appreciated was that I could put the ingredients together in the slowcooker & then do clean up, so when the guests arrived, the kitchen was clean.

Slowcooker Squash & Chickpea Curry

Ingredients:

2C cubed, peeled butternut squash (half an average-sized squash)
2C peeled, diced potoatoes (2 large potatoes)
1-19oz can chickpeas, drained & rinsed
1 Tbsp oil
1 onion, diced
2 cloves garlic, minced
1 Tbsp ginger, minced (used ginger from a jars from the produce section)
3 Tbsp curry paste (I used green curry)
1-400 mL can light coconut milk
1 C stock
1/4 C peanut butter or cashew butter (I used PB)
1/4 tsp salt
2 C packed, shredded swiss chard or spinach (I used spinach)
1 C frozen peas
2 Tbsp fresh corriander (I didn't bother)

Directions:
-In Slowcooker, combine squash, potatoe & chickpeas.
-In Skillet, heat oil over med heat; fry onion, garlic & gineger, stirring occasiionally until onion is golden brown, about 7 mins.
-Add curry paste to skillet, cook, stirring until fragrant, about 1 min.
-Add skillet contents to slow cooker
-Add coconut milk, peanut/cashew butter, and salt.
-Cover and cook on low for about 4 hours (or high for 3 hours) or until vegetables are tender.
-Stir in chard/spinach and peas. Cover & cook on high for 15 minss.
-Sprinkle with corriander.
-Serve over rice.

This sounds amazing!  I will definitely be trying it!

It sounds weird but baked potatoes are really good in the slow cooker and super easy.

- Wash potatoes
- Poke holes in them with a fork
- Wrap in foil
- Cook on high for 5-6 hours or on low for 8-10 hours

Serve with whatever you want! (I like cheese, sour cream, bacon bits and chives)
